七、煲仔菜

        “煲仔”即小砂锅,主要特点是保温好,而且可以边吃边加热,别有风味。一般的菜式是猴急的热炒,它则是要用火“熬”,熬出食物内在的味道,使整锅的主、配料散发出“成熟”的韵味来。煲仔菜向来是秋冬季节的食谱,但到了今天,已无分“季”界了。
